Sweet & Spicy Frittata


Healthy doesn't have to be boring! Sweet & spicy breakfast pizza aka frittata! Whisked some eggs with sriracha, pan fried on med, added some Japanese sweet potato and zucchini slices. Wait til bottom ("crust") is cooked, topped it off with more sweet potato and zucchini slices along with sundried tomatoes and bake in the oven until egg is fully cooked (approx 10 min). Cut into triangle slices and drizzle a lil sriracha on it and you've got a Sweet & Spicy Breakfast Pizza!
