Black Bean Oats Stuffed Pepper
Purple Plates! I'm making everything with purple today. Starting with breakfast - bell pepper stuffed with organic rolled oats mixed with a lil bit of unsalted black beans, egg whites and purple yams. Topped with a soft egg yolk. Served with a side of honey Greek yogurt and grapes. I love purple! Good balance of carbs, fat and protein in one meal!
