Curry Steamed Mussels Over Brown Rice



Curry Steamed Mussels with Brown Rice.

Heat pan on stove top, add olive oil and garlic until brown. Then add 1 can of coconut milk, a drizzle of fish oil and 1 tbsp of curry powder, mix well.


Once boiled, add in the mussels. Cover and cook on medium for 10 minutes or until mussels open up. Discard all mussels not opened.
Pour over brown rice and serve!
