Baked Stuffed Tomatoes



Baked Stuffed Tomatoes for dinner! Healthy & delicious!

Preheat oven to 350 degrees. Cut top off of beefsteak tomato, carefully scoop out the middle and drain. Rub salt and pepper mixture around the inside of tomatoes. Set aside.


Heat chopped green onions and minced garlic in frying pan. Then spread in bottom of tomatoes, and add fresh spinach leaves and grated parmesan cheese. Top with egg, careful not to break yolk. Place in oven and bake for 30 min. Once done, top with more parmesan cheese and fresh parsley.

Place on bed of fresh spinach leaves with kiwi cubes.
