Thai inspired dinner tonight is Curry Chicken Pineapple Boat!
Prepare pineapple by cutting in half and scoop out cubes of pineapple and hollow out the rest, saving some of the juice in separate bowl, leaving a little bit inside the boat, then toss the rest. Put in fridge to chill.
Cook quinoa as directed on package in chicken broth. Dice green onions and mix into quinoa once its done.
Prepare curry sauce by mixing light coconut milk and spicy curry powder. Cut chicken breast in slices or cubes, heat pan in coconut oil and toss chicken in. Then pour some pineapple juice into the pan then the curry mixture. Make sure to coat all pieces of chicken.
In separate pan, grill pineapple cubes in coconut oil, browning to your desired taste.
Layer pineapple boat with fresh spinach leaves, the juice left inside the boat will act as dressing for the spinach, then add the quinoa, curry chicken and grilled pineapple cubes.
