Pan Seared Pork with Grilled Enoki Mushrooms and Mango Kale Salad



The other white meat…pork its what’s for dinner! Yes, I changed it up a little from my usual fish & chicken. Pan Seared Pork topped with Grilled Enoki Mushroom and a side of Mango Kale salad.


Clean pork cutlets by rinsing with water, then pat dry. Tenderloins are best and LEAN, poke with fork. Then drizzle EVOO and rub it in. Using dry seasoning rub, rub in it on both sides. Cover and let it marinate for at least an hour or two.
Remove kale leaves from stem and drizzle olive oil & brown rice vinegar, set aside in a bowl to soften the leaves. Squeeze fresh lemon juice when ready to serve. Add diced mangos.
Heat pan on med-high heat with just a little bit of olive oil. Then pan sear pork cutlets, 2-3 minutes on each side. Remove immediately as to not over cook the meat.
Clean enoki, cutting off the ends. Cut large slices of white onions and grill both in pan. Season to taste and plate as desire.
