My asian inspired dinner tonight is Wasabi Tofu Stuffed Salmon with Steamed Bok Choy. It came out AMAZING and the beau really liked it too! The wasabi flavor really stands out and is perfect with salmon.
Ingredients:
2 Salmon filets
3oz Silk (soft) tofu
1-2 heads of bok choy
1 tsp wasabi paste
Lime juice
Furikaki seasoning
Scallions
Ponzu sauce
Preheat oven to 400.
Combine tofu with wasabi paste and squeeze lime juice. Mix well. Slice salmon in half to create pockets, then stuff the tofu mixture. You will likely have extras left if you have small filets. Bake in oven for 12-15 minutes or until salmon starts to flake.
Heat 1/2 inch of water in sauteed pan, add bok choy until it starts to wilt. Pour water out and add ponzu sauce.
Sprinkle furikaki seasoning and scallions when plating.
