Baked Sweet Potato with Stir Fry Vegetables and Egg


Breakfast is the most important meal of the day! Don't skip it! Today, I whipped up some leftovers: sauteed organic spinach, black beans, onions, and tomatoes topped with an over- easy egg, and half of a sweet potatoe. Fabulous!
