Avocado & Egg Brown Rice Cake with Baked Kale



It’s breakfast for dinner. Avocado & Egg Brown Rice Cake with Baked Kale. Trying to use up some leftover ingredients and came up with this awesome meal.

Preheat oven to 400 degrees. Cut stem from fresh kale leaves, drizzle olive oil & sprinkle cumin. Place on baking sheet and bake for 10 minutes.
Cut and mash one avocado. Dice yellow onions, heat in frying pan to Brown a little then mix into avocado.
Heat turkey bacon in frying pan for 5-10 minutes, then cut half into small pieces, and leave other half to plate.
Spread avocado on brown rice cake, add diced sundried tomatoes (or fresh tomatoes), top with a Sunnyside up egg and sprinkle bacon pieces over egg.
