Healthy Camp Eating

I was car camping for Coachella the past weekend, 5 days and 4 nights out in the desert with limited access to fresh foods and cooking tools, I planned ahead of time for some good, healthy eating to offset some naughty indulgence as well.

Some of the items I brought with me included:

- apples
- bananas
- roasted almonds
- unsweetened dried apples
- brown rice cakes
- starkist seasoned tuna packs
- organic cooked quinoa bowls
- peanut butter
- wasabi soy peas
- cuties

We had coolers to keep some of the items cooled but with the inconvenience of a consistent cooling method, I was limited to how much perishable foods I could bring.  Some days, we were able to take the shuttle to the local grocery store and dine at the nearby restaurants.  But for convenience, I consumed what was available within our campsite.  I was able to grab some marinated chicken from the grocery store to grill back at camp one evening and complimented it with a side of salsa.

When traveling, even with limited resources, it is still possible to eat healthy by planning ahead and shop for healthier snack and meals. Mixed nuts and dried fruits are great alternatives to snacks and for a quick meal, spread peanut butter on brown rice cakes and top with slices of bananas.  Starkist seasoned tunas can be mixed with the cooked quinoa bowls for a complete meal.

Always be prepared and don't give in on processed foods and all the junk that is out there.  I'l admit I indulged on chips and salsa, one of my biggest weaknesses, but I also consciously consumed to a sufficient satisfactory amount without over indulgding. I absolutely wouldn't beat myself up over a weekend of enjoyment and shocking my body to work a little differently than normal.
