Breakfast….or brunch I should say, is Avocado Egg Cup with Apricot Cheese Brown Rice Cake. A quick and simple meal for a relaxed weekend.
Preheat oven to 350 degree. Cut avocado in half, the seed out. Crack an egg and separate whites into a bowl then pour yolk into hollow space of avo. Bake on baking pan for 15 minutes.
Scramble remaining egg whites to serve on side. Season as desire.
Melt apricot cheese and spread on brown rice cake. Top with starfruit, or use whatever fruit you desire.
