Chicken & Kale Stuffed Zucchini Boats with Baked Sweet Potato Fries. Keep cooking simple, yet still healthy, no meal prep a week ahead of time for this. You can eat fresh and healthy without having to eat meals you cooked 5 days ago.
Preheat oven to 375. Prepare sweet potatoes by slicing them length wise, coat with olive oil and basil seasoning. Spread in baking sheet without stacking. Set aside to bake along with zucchini boats.
Prepare zucchini boats by cutting it in half, length wise. Then carefully scoop out the middle to chop into pieces for the stuffing.
Prepare stuffing by chopping white onions, garlic and fresh kale leaves. Heat pan on high with olive oil, then toss in the onions and garlic. Once settled, toss in the zucchini pieces and cook, then add kale leaves. Lastly, add ground chicken. Season with salt, pepper & cumin. Once cooked, stuff into zucchini boats. And place the boats in baking pan filled with a layer of water.
Bake both zucchini boats and sweet potato fries together for 25-30 min, flipping the fries halfway through.
