Dinner is served! Lemon Zest Shrimp Skewers over bed of Kale & Quinoa Brown Rice. Fridge is stocked again and I’m back in the kitchen cooking away!
Peel fresh shrimp and place in olive oil heated frying pan, single layer. Brown on one side then flip to brown on other side. Shrimp cooks fast so don’t let it cook to long or it will taste rubbery. Squeeze lemon juice over the shrimp. Skewer sliced kiwi with shrimp and set aside.
Steam fresh kale leaves and mix into cooked brown rice and quinoa. Season with garlic & herbs.
