Mediterranean Salmon Pizzadilla



Mediterranean Salmon Pizzadilla is what’s for dinner. I was debating on whether this should be a pizza or quesadilla but I think pizzadilla is most appropriate.
Preheat oven to 400 degrees. Place one brown rice tortilla and spread Mediterranean herb feta cheese (Trader Joes), place another tortilla on top. Cut into four pieces. Bake for 5 minutes or until soft and the cheese slightly melts. Make sure to do this part last and serve immediately.

Grill fresh salmon on stove with lemon pepper seasoning for 10-12 minutes. Once done, use a fork to scrape the flakes.
Take the prepared tortilla slices and spread tomato & basil hummus on top, layer with fresh spinach leaves, salmon pieces and top it off with red onions.
