Tuna Stuffed Deviled Eggs & Spinach Quinoa Cake



Been out of town car camping at Coachella the past few days, missing cooking and having fresh foods but still enjoying a little bit of naughty eating to keep me sane and my body working.
Came home to a pretty bare fridge so working with what I had. Breakfast today is Tuna Stuffed Deviled Eggs & Spinach Quinoa Cake.

Tuna eggs: Hard boil eggs, put eggs in cold water with salt, bring to boil then turn off heat, cover and let sit for 12 min to continue cooking process. Then transfer into bowl of cold water and peel. Cut into halves, scoop out yolk and mix in with tuna (I used starkist herb & garlic seasoned tuna packs), squeeze fresh lemon juice and fill back into egg whites.
Quinoa cake: Mix fresh spinach, cooked quinoa, 1egg and feta cheese. Heat pan on high with coconut oil, place formed cakes into pan, brown on both sides and reduce heat.
Eat Clean, Train Mean & Supplement in Between!
