Grilled Jumbo Shrimp & Fish Ball Skewer and Watermelon Salsa with Jicama Chips



Grilled Jumbo Shrimp with Assorted Fish Balls & Tofu Skewers and Watermelon Salsa with Jicama Chips.

Watermelon Salsa: cut one small watermelon in small pieces. Dice half of red onions & 1 whole jalapeno pepper (large one), finely chopped cilantros (1 bunch). Mix all together then squeeze fresh lime juice. Put in fridge to chill. Clean out watermelon shell for serving.
Slice jicama in thin slices to be served raw as chips with watermelon salsa.
Skewers: I used fresh jumbo shrimp (frozen is not an option!). Deshelled, washed, then throw in frying pan on medium. Seasoned with lemon pepper. While cooking shrimp, boil assorted fish balls & tofu (purchased at Asian market) on high until water boils. Remove cooked shrimp and using the same pan, grill the fish balls & tofu to season and brown a little bit. Then skewer once its all done.
