Veggie Egg Crepe



I have an exciting training day today so I made an exciting breakfast to get me started! Its an open faced Veggie Egg Crepe!

For the crepe, I used two whole eggs, and thinly cooked in pan with a little bit of chia seeds. Set aside. I then tossed in fresh chopped kale in pan and let it crisp up a little. Sprinkle a bit of crumbled feta cheese, then layer the kale, top with thinly sliced red onions, and drizzle with none other than sriracha! A good little spicy kick to get that metabolism going too!
