Poached Egg with Beets Muffin for breakfast. Delicious #yolkporn to start out my #TuffenUpThursday I opted to have the beets raw this morning to preserve nutrients (and because I was out of time) but you can always cook them (roast or boil) for a softer bite.
Ingredients:
1/2 Ezekiel Sprouted Muffin
1 Large Egg (poached)
2 oz of raw red beets
