Just a muscled up Chicken Salad for dinner tonight. Realized I’m a little short on protein so had to up it for this meal.
Ingredients:
2 5oz chicken breasts
4 eggs
2 cups fresh spinach leaves
8oz green beans
A few grape tomatoes
Olive oil & brown rice vinegar as dressing
Italian seasoning (or just salt and pepper)
