After a long 30 mile HILLY bike ride today, I decided to do a quick and simple meal for dinner. Smoked Salmon Spinach Pocket. No cooking required :)
Ingredients:
1 Whole Grain Pita
1 oz fresh spinach leaves
2 tbsp of lemon cilantro hummus
1 oz smoked salmon
