PURPLE Power Pancakes! Made some purple pancakes to fuel for our bike ride to the beach today! Again, cleaning out the fridge with these ingredients.
Mix egg whites with oats, let sit and soak through while waiting for the purple yams. Peel and cut purple yams into small pieces. Boil in pan on high until soft then mash. Then mix with oats. Make pancakes with coconut oil on medium-low heat. Add blueberries and drizzle with a bit of agave nectar.
Ingredients (serves two):
2 egg whites
1/4 cup of organic rolled oats
2 oz of mashed purple yams
handful of blueberries
organic agave nectar
