I was car camping for Coachella the past weekend, 5 days and 4 nights out in the desert with limited access to fresh foods and cooking tools, I planned ahead of time for some good, healthy eating to offset some naughty indulgence as well.

Salmon Stuffed Avocado with Brown Rice Chips. Who says you can’t have chips and dip for breakfast? Had to come up with a dish using leftover salmon and the rest of the brown rice tortilla before it spoils and voila!
Preheat oven to 400 degrees. Place brown rice tortilla on greased baking sheet, drizzle a little olive oil and sprinkle cinnamon (optional). Cut into triangle wedges. Bake for 7 minutes, Keeping a close eye on it.

Mediterranean Salmon Pizzadilla is what’s for dinner. I was debating on whether this should be a pizza or quesadilla but I think pizzadilla is most appropriate.
Preheat oven to 400 degrees. Place one brown rice tortilla and spread Mediterranean herb feta cheese (Trader Joes), place another tortilla on top. Cut into four pieces. Bake for 5 minutes or until soft and the cheese slightly melts. Make sure to do this part last and serve immediately.

Turkey Bacon Cups with Kale Chips for breakfast! Who wants some???
Preheat oven to 400 degrees. Spray olive oil in cupcake pan. Using unsecured turkey bacon and wrap in individual cup. Bake bacon for couple minutes them take it out. Add 1 egg per cup. Separate yolk and whites first if you want to. I added the yolk first them pour whites in. Bake for 15 minutes.

Dinner is served! Lemon Zest Shrimp Skewers over bed of Kale & Quinoa Brown Rice. Fridge is stocked again and I’m back in the kitchen cooking away!
Peel fresh shrimp and place in olive oil heated frying pan, single layer. Brown on one side then flip to brown on other side. Shrimp cooks fast so don’t let it cook to long or it will taste rubbery. Squeeze lemon juice over the shrimp. Skewer sliced kiwi with shrimp and set aside.

I enjoy yoga once in awhile to keep my flexibility in check. My 5'3" height has nothing to do with the fact that I can still bend forward and place my palms completely flat on the floor without bending my knees. So it's always a good idea to try yoga if you're having problems with stretching.

Sweet Potato Egg Cups for breakfast!
Preheat oven to 400. Heat sweet potatoes (yams) til soft enough to mash. I used Korean yams & Okinawan yams (purple). To create a smoother mash texture , just add liquid (light coconut milk works and taste well with it).

Thai inspired dinner tonight is Curry Chicken Pineapple Boat!
Prepare pineapple by cutting in half and scoop out cubes of pineapple and hollow out the rest, saving some of the juice in separate bowl, leaving a little bit inside the boat, then toss the rest. Put in fridge to chill.

Breakfast Egg Roll! There’s nothing fried or Asian about this egg roll. Just another simple and easy breakfast when you’re in a hurry. Whisk 2-3 eggs while heating pan on medium in coconut or olive oil. Then roll in fresh spinach leaves and feta cheese. Drizzle sriracha if desired.

Baked Stuffed Tomatoes for dinner! Healthy & delicious!
Preheat oven to 350 degrees. Cut top off of beefsteak tomato, carefully scoop out the middle and drain. Rub salt and pepper mixture around the inside of tomatoes. Set aside.

Sushi: Using sashimi grade salmon and cooked shrimp bought from store, I wrapped them in thinly sliced (with peeler) Persian cucumber. Add avocado as desired.

Steam kale leaves until soft, slide carrots length wise,place in flat egg pancake and roll. Season to taste.

Preheat oven to 375. Slice cucumbers, carrots and yellow squash in rounds. Mix organic garbanzo beans, squash & carrots in roasting pan with olive oil, salt & black pepper. Roast for 10-15 minutes.

Dinner tonight is Baked Turkey Quinoa Stuffed Artichoke.
Prep whole artichoke, once cleaned and trimmed, add artichoke in pot of water with salt and lemon juice. Once boiled, take artichoke out and let cool a bit upside down.
